Thursday Night Out International PotluckWhat’s better than a Thursday Night Out? A Thursday Night In...a house eating delicious food with your classmates! Taking advantage of our cohort’s diversity, we planned a special Thursday evening potluck, where everyone and anyone was encouraged to bring a dish or drink to share with all. The diversity of dishes sparked impromptu conversations about heritage and culture, while satisfying our hungry student stomachs.

Everyone brought a lot of food and drink including matzo ball soup, chili con carne, all types of Indian cuisine (homemade and from Tiffins), enchiladas, Tim Tams, shredded chicken tacos, homemade brownies, Thursday Night Out International Potluckkale salad with a miso-ginger vinaigrette, haupia and a healthy selection of wine and locally harvested, non-GMO artisan beer. Within an hour, my stomach was filled to the brim, but some true culinary champions forged on.

With the luxury of a temperate Colorado fall evening, the group happily migrated to the backyard to roast marshmallows for s’mores (some for the first time!) over a big bonfire. As the fire died down, the night ended with some card and board games and a lot of laughter. A second potluck is already in the plans for the spring semester!
