Whether they are in fry or tot form, baked or roasted, potatoes are a staple in many of our favorite meals. For February’s Seasonal Table event, stop by the Center for Community (C4C) Dining Center this week to try a variety of potato-themed dishes.

This week’s menu

The organic potatoes used in this month’s special menu items are locally sourced from Strohauer Farms. This family-owned and operated farm is based 50 miles north of Denver and has been growing organic potatoes since 2006.

Seasonal Table dishes will be served during lunch at the C4C Dining Center.

  • Tuesday, Feb. 25: Potato Soup (contains gluten, milk, wheat, pork)
  • Wednesday, Feb. 26: Purple Potato Pierogi with Warm Roasted Corn Relish (contains gluten, milk, wheat)
  • Thursday, Feb. 27: Tacos de Papa (contains milk)
  • Kosher (Feb. 24–27): Picadillo de Papa

Locally sourced produce from Colorado farms

The produce featured at this month's Seasonal Table event was sourced through FoodMaven. Campus Dining Services partners with FoodMaven to gain greater access to local food producers who may not have access to wide distribution networks. This partnership allows us to serve more locally produced food and help reduce our overall carbon footprint. 


Eating at the C4C

The C4C Dining Center accepts meal plans, Munch Money, Campus Cash and credit/debit cards. Students living in the residence halls have a meal plan, providing 15 or 19 meals per week plus a balance of Munch Money. Students living in Graduate & Family Housing, Bear Creek Apartments or living off campus can purchase a Block Meal Plan at any time during the fall or spring. Campus Cash can be added to your Buff OneCard online or at the Buff OneCard office.
