Instant Pot Pulled Pork

Ingredients

  • 4 lb pork shoulder
  • 3 tablespoons olive oil to sear the pork

Dry Rub:

  • 1/4 cup brown sugar
  • 1 1/2 tablespoons paprika
  • 1 tablespoon kosher salt
  • 1 1/2 tablespoons ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cayenne (red) pepper

Liquid for Pot:

  • 2 cups dark beer
  • 2 cups beef or vegetable broth

Directions

  • Mix the spices for the dry rub.
  • Rinse and dry the pork shoulder, then cover with the dry rub. You can cook immediately or refrigerate overnight.
  • Turn the Instant Pot to sautè and add the 3 tablespoons of olive oil. Place the seasoned pork shoulder in the hot oil and sear each side for 2-3 minutes to brown.
  • Add the 2 cups of beer and 2 cups of broth to the Instant Pot.
  • Change the settings on the Instant Pot to HIGH PRESSURE and set it to cook for 90 minutes. Once time is reached, allow it to complete natural release.
  • Pull apart the pork and serve. Be sure to remove the string holding the pork together BEFORE you eat it.
