Ingredients

  • 4 cups frozen hash brown potatoes
  • 5 eggs-large-beaten
  • 1/2 cup cottage cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 green onion-thinly sliced
  • 6-8 drops Tabasco
  • 6 slides bacon-cut in pieces and cooked half way(will finish cooking when dish is in oven)
  • Paprika

Directions

  • Preheat oven to 350 degrees
  • In large bowl, add hash browns, beaten eggs, cottage cheese, shredded cheese, green onion and Tabasco. Stir to combine. Pour mixture into 9” pie plate and spread evenly. Sprinkle with bacon and the paprika. Bake for 50-60 minutes or until lightly browned and set in center. Can be made day before and refrigerated before baking.
