Ingredients
- 3 apples peeled and chopped
- 1 1/2 onions chopped
- 1 1/2 tablespoons butter
- 1 1/2 teaspoons tumeric
- 1 1/2 tablespoons curry powder
- 1 1/2 tablespoons apricot jam
- 6 tablespoons white vinegar
- 3/8 teaspoon ground black pepper
- 1 1/2 teaspoons salt
- 3 thick slices of white bread
- 525 mililiters milk
- 750 grams ground beef
- 1/2 cup slivered almonds
- 3/4 cup raisins
- 6 bay leaves
- 3 eggs
Yellow Rice:
- 2 cups white rice
- 5 cups water
- 1 teaspoon tumeric
- 1 tablespoon butter
- 8 tablespoons raisins
- 1 teaspoon salt
Directions
- Saute the diced apples and onions in the butter.
- Add the tumeric, curry powder, apricot jam, vinegar, pepper and salt.
- Once combined, turn off the heat.
- Preheat the oven to 350 degrees.
- Soak the bread in the milk. Once soaked, gently squeeze out the the milk. Set the milk aside and break up the bread.
- Add the bread and ground beef into the curry mixture.
- Add the raisins, almonds and 50 mililiters of the milk and mix well.
- Place the mixture in a greased baking dish but do not press it down.
- Place the bay leaves on top of the mixture and bake for 35 minutes.
- Beat the egg with the remainder of the milk.
- Pour the egg mixture over the meat and bake for 20 minutes.
Yellow Rice:
- Place the rice, water, raisins, butter and tumeric in a large pot.
- Cover and bring to a boil, lower the heat and simmer.
- The rice will be ready in 15-20 minutes.

Boboti is a well-known South African dish from the Cape province consisting of fruity and spiced ground beef baked with an egg based topping and served with a yellow rice. Due to its unusual flavour combinations, it is not an instant hit with young kids BUT if you persevere, it will definitely become a household favourite. This is a must with all our family gatherings.
