Ingredients

Cake:

  • 1 cup sugar
  • 1 stick unsalted butter
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup mashed very ripe banana
  • 2 cups flour
  • 1 teaspoon vanilla
  • 3/4 cup buttermilk

Frosting:

  • 1 box Baker's unsweetened chocolate
  • 4 tablespoons unsalted butter
  • 3 cups sifted powdered sugar
  • 6 tablespoons milk

Directions

Cake:

  • Mix butter, sugar, eggs and vanilla.
  • Add all dry ingredients while alternating adding the buttermilk. Add the banana last.
  • Pour mixture into a well buttered metal cake pan.
  • Bake at 350 degrees for one hour. Cake is done when toothpick inserted in the middle comes out clean.
  • Slice cake in half when cool. Wrap both halves well and freeze both parts.
  • When ready to serve make the frosting.
  • Frost the frozen cake and then let it defrost on counter.
  • Slice and serve.

Frosting:

  • In a double boiler melt whole box of Baker's unsweetened chocolate and 4 tablespoons of unsalted butter.
  • In a bowl mix 3 cups of sifted powdered sugar with 6 tablespoons of milk. Add melted chocolate and butter, mix well.
