Ingredients
- Old bagels or english muffins
- Mayo
- Eggs - double ration, 1 bagel to 2 eggs
- Milk
- Optional: chopped bacon, green peppers, onions, green chilis, seasonings, shredded cheese
Directions
- Slice up into bite size pieces then coat them with mayo.
- In a separate bowl whisk eggs (double ratio 1 bagel 2 eggs etc) with some milk and anything else you want, cooked chopped bacon, green peppers, onions, green chilis, any seasonings pluss shredded cheeses.
- Pour bagels into greases casserol dish and cover with egg mixture.
- Cover and refrigerate for at least an hour to overnight.
- When ready to bake at 350 degrees for 30-50 minutes depending on size- until top looks brown and toasty.
