Bagel Strata

Ingredients

  • Old bagels or english muffins 
  • Mayo
  • Eggs - double ration, 1 bagel to 2 eggs
  • Milk
  • Optional: chopped bacon, green peppers, onions, green chilis, seasonings, shredded cheese

Directions

  • Slice up into bite size pieces then coat them with mayo.
  • In a separate bowl whisk eggs (double ratio 1 bagel 2 eggs etc) with some milk and anything else you want, cooked chopped bacon, green peppers, onions, green chilis, any seasonings pluss shredded cheeses.
  • Pour bagels into greases casserol dish and cover with egg mixture.
  • Cover and refrigerate for at least an hour to overnight.
  • When ready to bake at 350 degrees for 30-50 minutes depending on size- until top looks brown and toasty.
