Ingredients

  • 2 tablespoons vegetable oil
  • 4 lbs ground beef (ground chuck or sirloin, whatever you prefer)
  • 1 small white onion, finely chopped
  • 1 cup hoisin sauce
  • 6 tablespoons low-sodium soy sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon sriracha sauce
  • 3 teaspoons sesame oil
  • 2 teaspoons sugar
  • 3/4 teaspoon red pepper flakes
  • 6 cloves garlic, chopped (if cloves are big, use 3 cloves)
  • 4 tablespoons ginger, finely chopped
  • 8 scallions, sliced light green and white parts only
  • 8 cups cooked steamed rice, white or brown

Spicy Mayo Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha sauce

Garnishes:

  • 3 carrots, grated
  • 8 radishes, thinly sliced
  • 1 cucumber, halved and thinly sliced
  • 8 scallions, chopped
  • 3/4 cup peanuts, chopped

Directions

  • In a small bowl, mix the hoisin sauce, soy sauce, tomato paste, sriracha sauce, sesame oil, sugar and red pepper flakes. Set aside.
  • Heat the vegetable oil in a large sautè pan over medium-high heat. Add onions and beef and brown the beef, breaking into pieces for 5 minutes.
  • Add the garlic and ginger and stir often until softened for about 2 to 3 minutes. Drain the excess fat from the beef.
  • Add the hoisin sauce mixture and cook until the beef is coated and cooked through, about a minute. Stir in sliced scallions.
  • Serve the beef into bowls over cooked rice and garnish with grated carrots, radishes, cucumbers, scallions and spicy mayo sauce, if preferred.

  • In a small bowl stir the mayonnaise and sriracha sauce until well combined.
