Cranberry Oat Crumble Bars
Ingredients
Yields 12 bars
- 2 c. all-purpose flour
- 2 c. quick-cooking oats
- 1 1/2 c. brown sugar, packed
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 c. (two sticks) unsalted butter, melted
- 4 c. fresh cranberries (640 grams)
- 1 1/4 c. granulated sugar
- 1 tbls lemon juice
- 1 tsp vanilla
Directions
- Preheat oven to 350.
- Combine flour, oats, sugar, baking soda and salt in a large bowl. Stir in melted butter and mix until crumbly. Press HALF the mixture into a greased 13x9 inch baking dish. Bake 8 minutes.
- Combine cranberries, sugar, lemon juice and vanilla in a large sauce pan; cover and cook over medium-high heat until berries pop. Reduce heat to medium/medium-low and cook until mixture thickens to a jam-like consistency.
- Spoon the filling evenly over the crust; sprinkle with reserved crumb mixture Bake 25 minutes or until filling is bubbly and the topping is golden brown. Let cool 20 minutes or until filling is set. Cut into bars and serve.
