Ingredients

  • 1 head of red cabbage
  • 1/4 cup good olive oil
  • Juice & zest of 1 lime
  • Sugar- about 1 tbsp, depending on taste
  • Coarse salt, fresh ground pepper, according to taste

Directions

  • Pull off the soft outer leaves of the cabbage.
  • Stand it on its stem and cut it in half.
  • Core out the thick fibrous stem.
  • Slice the cabbage into fine shreds.
  • Add olive oil, lime juice, lime zest. Mix with your hands.
  • Taste.
  • Add sugar, salt, pepper to your liking.
