Ingredients
Yields: 1 cheese ball

  • 8 oz. cheddar cheese
  • 1 4oz. jar pimentos-chopped, plus liquid
  • 1 c. mayonnaise
  • Green onions, finely chopped, to taste
  • 1 can Chipotle peppers in adobo sauce (rinse off the sauce, wash out the seeds) finely chopped, to taste
  • 1/8 tsp salt

Directions:

  • Grate the cheese into a bowl and add the chopped pimento, the mayo. and enough pimento liquid to make the mixture as moist as desired.
  • Add as much chopped green onion and Chipotle peppers as you like. (keep tasting)
  • Allow the spread to remain in the refrigerator for 24 hrs. for the flavors to develop.
  • I like to serve this with crackers rather than your usual cheese ball.
