Ingredients
Yields: 8 portions

  • 1 box of Manischewitz Matzo Ball & Soup Mix
  • 1 pound of chicken thighs or drumsticks with skin on
  • 2 celery sticks - chopped 
  • 2 large carrots - chopped 
  • 1 large onion - chopped
  • 4 cubes or teaspoons of chicken bullion

Directions

Follow soup mix instructions on box to make soup. I add water until it is 3/4 the way to the top of the pot. It's OK to add that much water because we are adding more bullion to the water. Add all ingredients to the water and allow to boil. Then, simmer on med/low with the lid on for a few hours. When you think the chicken is cooked and soft enough to "fall off the bone," take the chicken out and remove the skin and bones. Chop the chicken in pieces and return to the soup pot. Now it is time to make the matzo balls. Follow the instructions on the box and make sure you leave the mixture in the refrigerator according to the instructions. When you are ready to form the balls, make sure you wet your hands and use a teaspoon. Make small balls with your hands - the size of a walnut since the balls will enlarge while boiling in the soup. There should be enough for almost everyone to have two. You can let the soup sit on the stove for a few hours if you choose - or just put in the refrigerator and serve when ready. It's delicious the next day too!
