Hunt Family Jambalaya

Ingredients
Yields: 6-8 Servings

  • 2 c. rice
  • 1 container chicken stock (4 c.)
  • few Bell and hot peppers (de-seed them)
  • 1 Onion
  • couple breasts of Chicken
  • 3-4 Spicy Italian sausages
  • couple dozen Shrimp
  • Lemon juice (~1/2 c.)
  • Cajun spices
  • Cilantro (fresh is better)
  • Salt
  • Pepper

Directions

  • Cut up the sausage, chicken, peppers (de-seed them), and onion.Sear the sausage on low/medium heat (the burners at the ranch get super hot, so do this on low!). Throw in the peppers and onions.  Cook for ~5 min.
  • Throw in the chicken, spices, rice, and chicken stock. Stir occasionally, cooking for ~35 min. Don’t let it burn!  Meanwhile, put the frozen shrimp in warm water to thaw, and remove the shells.
  • Turn heat off, add cilantro, lemon juice and shrimp (shells off). Stir and put lid on for few minutes. Add salt and pepper. Serve.
