Chocolate Banana Bread
Ingredients
Yields 1 loaf
- 1 3/4 c. flour
- 3/4 c. whole wheat flour
- 2 tsps baking powder
- 1 tsp ground ginger
- 1/2 tsp baking soda
- 1/4 ttsp salt
- 1/4 tsp cardamon
- 1/4 tsp cinnamon
- dash of nutmeg
- 1 c. warm milk
- 1/2 c. molasses
- 1/4 c. canola oil
- 1 small jar prune baby food
- 2 large eggs slightly beaten
- 3/4c. packed brown sugar
- 1/2 c. golden raisins
- cooking spray
- 3 tbls chopped walnuts
Directions
- Preheat oven to 350 degrees
- Lightly spoon flour into measuring cups, combine flours, baking powder, ginger, baking soda, salt, cardamon, cinnamon and nutmeg in a large bowl and whisk together.
- Combine milk and next four ingredients through eggs, in a medium bowl stirring with a whisk until blended. Add sugar, stirring until blended. Make a center in the flour mixture and add milk mixture to flour mixture, stir until combined, then stir in raisins.
- Scrape batter into a 9" x 5" loaf pan that has been greased or sprayed with oil. Sprinkle walnuts down center of the loaf.
- Bake at 350 degrees for 1 hour or until fork or knife inserted comes out clean. Cool loaf in pan on a wire rack.
- To bake in 3 smaller bake sale size pans, bake for 50 min.
