Chocolate Banana Bread

Ingredients
Yields 1 loaf

  • 1 3/4 c. flour
  • 3/4 c. whole wheat flour
  • 2 tsps baking powder
  • 1 tsp ground ginger
  • 1/2 tsp baking soda
  • 1/4 ttsp salt
  • 1/4 tsp cardamon
  • 1/4 tsp cinnamon
  • dash of nutmeg
  • 1 c. warm milk
  • 1/2 c. molasses
  • 1/4 c. canola oil
  • 1 small jar prune baby food
  • 2 large eggs slightly beaten
  • 3/4c. packed brown sugar
  • 1/2 c. golden raisins
  • cooking spray
  • 3 tbls chopped walnuts

Directions

  • Preheat oven to 350 degrees
  • Lightly spoon flour into measuring cups, combine flours, baking powder, ginger, baking soda, salt, cardamon, cinnamon and nutmeg in a large bowl and whisk together.
  • Combine milk and next four ingredients through eggs, in a medium bowl stirring with a whisk until blended. Add sugar, stirring until blended. Make a center in the flour mixture and add milk mixture to flour mixture, stir until combined, then stir in raisins.
  • Scrape batter into a 9" x 5" loaf pan that has been greased or sprayed with oil. Sprinkle walnuts down center of the loaf.
  • Bake at 350 degrees for 1 hour or until fork or knife inserted comes out clean. Cool loaf in pan on a wire rack.
  • To bake in 3 smaller bake sale size pans, bake for 50 min.
