Ingredients
- 4 tablespoons butter
- 3 cloves of chopped garlic
- 1 large onion, chopped (preferably Vidalia sweet onion)
- 1 can fire roasted tomatoes
- 4 cups chicken stock
- 1.5 cups BBQ Sauce (I use Sweet Baby Rays)
- 2 tablespoon Worcestershire sauce
- 1 scant tablespoon brown sugar
- 1/4 tsp cayenne pepper
- 2 pounds pulled pork (or chicken)
- 8-ounce frozen corn
- 8-ounce frozen Lima beans
- Salt and pepper, to taste
Directions
- Melt butter in a Dutch oven over medium high heat.
- Add garlic and onion, and sauté for about five minutes until softened and fragrant.
- Stir in remainder of ingredients, bringing to a boil, then reduce to a simmer and cook over medium low heat for one and a half hours, stirring occasionally.
- Serve with cornbread or saltine crackers.
- This freezes well!
