Noah's favorite brownies

Ingredients
- 1 cup unsalted butter melted and cooled
- 2 tablespoon veg oil
- 1 1/4 cup white sugar
- 1 cup dark brown sugar
- 4 large eggs at room temp
- 1 tablespoon vanilla extract
- 3/4 teaspoon salt
- 3/4 teaspoon instant espresso powder
- 1 cup all purpose flour
- 1 cup dark unsweetened cocoa powder
- 5-ounce roughly chopped dark chocolate (72%)
- 5-ounce semisweet chocolate chips
Directions
- Preheat oven to 350.
- Lightly grease a 8x12" baking pan with cooking oil spray and line with parchment paper. Set aside.
- Combine melted butter, oil and sugars togehter in a medium bowl. Mix with electric mixer or whisk to combine. Add the eggs, vanilla and beat until light in color ~1min.
- Sift in flour, cocoa powder and salt. Gently fold the dry ingredients into the wet until just combined.
- Fold in the chocolate pieces.
- Pour into the prepared pan and smooth out the top. (let your favorite college student lick the spatula and bowl)
- Bake 30 min until the center of the brownies no longer jiggles and is just set to the touch.
- Allow to cool completely prior to removing from the pan and cutting on a cutting board.
