There is nothing like a warm, home cooked meal on a chilly Colorado day. These recipes are not only crowd pleasers with minimal clean-up, but wallet pleasers as well!

Sweet potatoes are a fantastic source of fiber as well as vitamins B and C. This recipe is for a simple roasted sweet potato. However, you can dress it up or down for any occasion!  Add quinoa and spinach for a hearty dinner that will keep you full and help you focus on studying for midterms. If you have a sweet tooth, try adding peanut butter and semi-sweet chocolate chips for a guilt-free dessert. If you’re hosting friends with different tastes, make a roasted potato bar! Put out a variety of toppings and let your guests build their own sweet potato.

They say breakfast is the most important meal of the day, but it might also just be the best type of food. Eggs are full of protein and so delicious! Plus they’re budget friendly. You can get a dozen eggs for about $2.50, which is about .21 cents per egg. Pair your eggs with these two ingredient banana pancakes for a full plate of deliciousness that will keep you full and provide important nutrients to keep you focused during study groups.

Doing dishes is about as enjoyable as waking up for 8 a.m. classes. Sheet pan dinners are perfect for those who dread dirty dishes because all you need is a pan, an oven and a little patience to make a delicious dinner! This sheet pan dinner calls for asparagus and broccoli but any vegetables will work with this sweet and savory chicken. Save extra money by using veggies that are in-season.

 

 

Pesto and chicken stuffed bell peppersStuffed peppers

($3.55 per serving)

Stuffed peppers are a wonderfully customizable meal. This particular recipe calls for chicken and pesto as the two main ingredients. However, you can make it vegan by substituting chicken for tofu or seitan. It also only requires a mixing bowl and sheet pan to make, so clean up is a breeze, so you can get back to that show you’ve been binge watching.

Nutrition Resource Clinic
Nutrition Services provides free consultations with a registered dietitian for CU Boulder students for a number of nutrition-related concerns. Walk-in hours are available at the Rec Center on Tuesdays from 2 to 6 p.m. No appointment necessary - just check in at the Fitness and Wellness Suite on the main floor. 

Nutrition Counseling
One-on-one nutrition counseling is available at Wardenburg Health Center and cover a variety of nutrition-related concerns. Schedule an appointment by calling 303-492-6280 or online through MyCUHealth

Dining Services Nutrition
