Buffeo

Makes 6 dozen cookies @ 3oz each (make sure to cut this in half if you are making it at home!)

Cookie dough

3lbs butter, cold
1.5lbs sugar
2lbs 4oz flour
1tsp salt
12oz cocoa powder

  1. Combine butter and sugar, mix on low speed for 15 seconds
  2. Add flour, salt and cocoa powder, mix 3-5 minutes, until dough attaches
  3. Roll out 0.25in, then with a buffalo cookie cutter, cut out cookies
  4. Place on baking sheet and chill
  5. Bake at 300° for 15-20 minutes

Filling

5lbs cream chese or mascarpone
6oz sugar
1.5tsp vanilla
3lbs 15oz marshmallow creme

  1. Combine sugar and cream cheese
  2. Add vanilla and marshmallow creme until filling is soft
