Creamy Asparagus Soup
(serves 6)

Ingredients:
1 tablespoon extra virgin olive oil
1 onion, chopped
1-2 garlic cloves, minced
1 bunch asparagus, washed and trimmed
5 cups stock or water
1/2 cup rolled oats
1 teaspoon dried dill
1/2 teaspoon sea salt
Freshly squeezed lemon juice

1. Heat oil in a pot and add onions and sauté until soft.
2. Cut asparagus into small pieces; add to onions and sauté.
3. Add stock, oatmeal, dill, and salt and bring to a boil.
4. Simmer for 15 minutes.
5. Transfer to a blender and puree; add fresh lemon juice to taste.
6. NOTE: This soup can be served cold in warm weather.
