BIONUTRITION

Kathleen Farrell, MS, RD   Kathleen.Farrell@Colorado.Edu

Kathleen Farrell is a registered dietitian, certified health fitness instructor and has a Masters degree in exercise physiology. Kathleen received her B.S. in dietetics from the College of St. Teresa’s in Winona, MN, completed her dietetic internship at Good Samaritan Hospital in Cincinnati, OH and got her Masters from the University of Illinois-Urbana. She has 23 years of experience as a dietitian (community, clinical, education, research and sports nutrition). In the research area, Kathleen worked as a research associate at the University of Illinois Body Composition Laboratory where she oversaw several body composition studies and provided nutrition support. As a dietitian, Kathleen has worked in both a community (WIC – Rapid City, SD) and clinical (Cardiac – Cheyenne, WY) setting as a dietitian and additionally, as a dietitian-exercise physiologist in a Sports Medicine clinic (Urbana - Champaign, IL). She has also had the opportunity to teach at the University level, University of Illinois and University of Northern Colorado, Greeley, and the University of Colorado-Boulder. Kathleen’s areas of interest are regional fat distribution in relationship to chronic diseases and sports nutrition.

Becky Staley is a registered dietetic technician, having received her AAS in Dietetic Technology from Front Range Community College and her registration credentialing from the American Dietetics Association in 2006.  Becky has completed 450 internship hours in clinical and community nutrition settings and has experience working with a research based nutrition education program funded by the USDA.  In 2006, Becky was selected as Outstanding Dietetics Student of the year by the Colorado Dietetic Association.  Becky is a member of the American Dietetic Association, the Northern Colorado Dietetic Association, and the Denver Metro Nutrition Network.

Services

The Bionutrition Department provides the following services to the GCRC investigators and others in the CU-Boulder clinical research community. 

  • Meet with investigators during the development and implementation of their protocols and the need for nutrition core support services (Dietary Protocol).
  • Assist with protocol flow sheet development (Protocol Checklist).
  • Interview participants to obtain detailed information on their dietary intake (Dietary Record, FFQ, 24 Hour Recall and Research Diet).
  • Provide participants with dietary instructions prior to certain measurements (General Guidelines).
  • Interview participants for their food preferences that will be used in promoting compliance with a planned research diet (Food Preferences).
  • Calculate energy, electrolyte and other dietary needs for participants' meals (Research Diet - Arginine).
  • Provide post-experiment food for participants studied under fasting conditions prior to leaving the unit (Post-Meal Menu).
  • Provide dietary counseling and education for protocols involving nutrition interventions (Low-Sodium Handout).
  • Screen subject's nutritional status for risk factors.
  • Mentor recent advances in software associated with computer-assisted analysis of diet.
  • Provide nutrition education and training for GCRC investigators, staff, clinical research trainees and dietetic interns.

Our metabolic kitchen is available through University Memorial Center (UMC) at the University of Colorado - Boulder.  Robin Margolin, Associate Director UMC Food Service, and her staff are responsible for the development and testing of new foods and recipes for research diets and for research projects to develop new approaches to therapeutic diets (http://www.colorado.edu/umc/).
