Spring Greens with Strawberry Vinaigrette

1 head of romaine, green/red leaf, or butter lettuce

For the dressing::
1 cup strawberries, fresh or thawed frozen berries
1/8 cup rice vinegar
1/4 cup olive oil
2 tablespoons honey
1/8 teaspoon salt
1/8 teaspoon pepper
3 tablespoons water, or more depending on desired consistency

1. Combine all the dressing ingredients and process until smooth.
2. Rinse and tear the lettuce into small pieces; toss with dressing and serve.
